It’s difficult not to be impressed by the Gingko Restaurant and Sky Bar, located on the 12th floor of the new VP Plaza de España Design, in Madrid.

The terrace, which offers wraparound views of the city, features a premium pool and eatery, with extensive use of Gingko leaf motifs. This botanical theme, a favourite of the hotel chain, runs throughout.

The bar (but not the sundeck) is open to the general public, as well as guests, and features bold geometric pattern design. Floor to ceiling windows make sunset bookings a must. The menu is a showcase for modern Spanish cuisine (octopus carpaccio, baby squid served with wok-fried vegetables, Galician sirloin with roasted piquillo peppers).

The pool dovetails with a central design element of the hotel, a 25m metallic waterfall created by Catalan artist Pere Gifre, well known for such sculptures. This tumbles from the bottom of the swimming pool to the ground floor of the hotel.
